I was browsing through family favorite recipes that would be perfect for spring and came across my Grandma's Easy Cake Batter Blondie Bar recipe. I just love this recipe and I am so glad I came across it to share with all of you.

I am 8 months pregnant and I am constantly searching for simple and easy recipes to make that don't take a lot of time in the kitchen and this recipe was perfect. If you love the taste of cake batter, then you will just love these cake batter blondie bars.

    🧂 Ingredients

    • yellow cake mix
    • vegetable oil
    • egg
    • milk
    • sprinkles
    • white chocolate chips

    • Liquid Measuring Cup
    • Dry Measuring Cups
    • Stand Mixer - or a hand mixer

    🔪Instructions

This is meant to be a brief overview of the recipe. For step-by-step instructions and a full printable recipe card with ingredients, please scroll down to the teal box below or Jump to Recipe.

    1. Preheat your oven to 350 degrees F.
    2. Combine yellow cake mix, vegetable oil, egg, milk, sprinkles and white chocolate chips.
    3. Stir batter until combined (batter will be thick).
    4. Place batter in a greased 8X8 pan.
    5. Bake for 18-20 minutes.
    6. Let blondie bars cool for 30 minutes before serving.

    ⏲️ Storage

Blondies will dry out faster when they are cut. So, if you're making these ahead of time, I suggest not cutting them until the day of your party. These cake batter blondies are best when kept in an airtight container and eaten within the first 1-2 days. However, if they are uncut, you can stretch it to 3-4 days.

Alternatively, you can make these and freeze them. Wrap the whole block of blondies in plastic wrap, then slide them into a freezer bag (usually I cut the block in half so I have more manageable sections.) Label the bag and store in the freezer for up to 3 months.

    💭 Frequently Asked Questions

Here are some questions (and answers!) readers often ask about this recipe.

What is the difference between a brownie and a blondie?

They use very similar ingredients, but a brownie has cocoa powder and blondies do not.

    Do blondies freeze well?

Yes! Just wrap them in plastic wrap store them in freezer bag. They can be stored for up to three months.

    How do you defrost blondies?

Simply take them out of the freezer and let them thaw to room temperature on the counter (unwrapped).

How do you fix undercooked blondies?

You can easily just throw them back in the oven and let them cook a bit longer.

    📖 Variations

Holiday party? Baby shower? You can easily switch out the sprinkles to match any party theme or holiday. For example:

    • black and orange for Halloween
    • red, white and green for Christmastime
    • green and white for St. Patrick's day (perfect for your dessert table next to the Minty Shamrock CheeseBall)
    • pink and blue for a gender reveal party
    • red, white and blue for 4th of July, Memorial day or Labor day picnic
    • pink, purple and teal for a unicorn party (serve alongside this Unicorn Popcorn)

    🍴 Serving Suggestions

These are great for parties and potlucks but all bake sales, or even just as a little lunch box treat!

If you want to get really fancy, you could pipe a little swirl of buttercream frosting right on top of each blondie bar.
