    This easy casserole uses boxed stuffing mix and frozen vegetables so it's a cinch to make! Stuffing is not just a side dish for the holidays. It's adds the best flavor to this chicken casserole!

    It's the perfect way to get dinner on the table quickly without a lot of prep work or a ton of dishes.

    You only need a handful of simple ingredients to make this easy recipe:

    • stuffing mix (such as Stove Top Stuffing)
    • chicken broth (or water)
    • chicken breasts (leftover chicken, rotisserie chicken, or shredded chicken all work also)
    • cream of chicken soup OR Cream Soup Substitute
    • sour cream
    • frozen mixed veggies
    • seasonings

    🔪 Instructions

    1. Preheat the oven to 400 degrees F.
    2. Lightly grease a 9x13 baking dish (or use cooking spray).
    3. In a large bowl, mix together the cream soup, sour cream, seasonings, mixed vegetables, and chicken.
    4. Spoon the chicken and soup mixture into the prepared casserole dish.
    5. Mix together the stuffing and hot water (or chicken stock).
    6. Spoon the stuffing mixture on top of the chicken filling.
    7. Bake until bubbly and crispy.

    Our baked chicken and stuffing casserole is the perfect meal for busy weeknights.

    🍲 Storage

    To Store: Leftover stuffing chicken casserole can be stored in an airtight container for 3-4 days in the refrigerator. (These are my favorite airtight containers.)

    To Reheat: Individual portions can be reheated in the microwave.

    To Freeze: Cover the casserole with foil and then place the whole dish into a 2-gallon freezer bag. Be sure to label it with the name, date, and baking instructions.

    For best results, thaw and bake within 6 months.

    To Thaw: Place the frozen casserole into the fridge and allow it to thaw overnight. Cover with foil and bake for 20 minutes. Then, remove the foil and bake for another 15-20 minutes or until the stuffing is crispy and the chicken filling is bubbly.

    📖 Variations

    One of the best things about this stuffing and chicken casserole is that it is extremely versatile. Don't like peas? Leave them out. Love the flavor of sauteed onions? Add them in! Pretty much anything goes with this great recipe.

    Now you know that we recommend that you make it just as it is written on the recipe card the first time you try it. That's because we test all our recipes to make sure they taste delicious. However, the next time you make our chicken and stuffing bake recipe, you might want to try one of these ideas:

    • Instead of chicken, prepare this recipe using leftover holiday ham or leftover turkey. You can also use ground chicken or chicken thighs.
    • Add in 1 cup of cooked diced potatoes, parsnips, sweet potatoes, or turnips.
    • I like to use my own homemade cream of chicken soup, however, any cream soup, such as cream of mushroom soup or cream of celery soup will work.
    • Add a sprinkle of shredded cheddar cheese over the top of the stuffing before baking.
    • Substitute cream cheese for the sour cream.
    • You can also make this with your own homemade stuffing (and if you love stuffing, try one of these great recipes:

    🍴 Serving Suggestions

    Since this stuffing casserole recipe reminds me a little bit of my mom's Chicken Pot Pie or Thanksgiving dinner, I like to serve it with tangy cranberry sauce. Sometimes I also serve it with garlic green beans and mashed sweet potatoes, but since this chicken casserole is so hearty, you don't really need to add anything else.

      • 6 oz stuffing mix (about 3-4 cups)

        I saved this recipe a long time ago and I don't know why I waited so long to try it. It was amazing and even my kiddo who doesn't like vegetables ate it and got more. This will be in the regular rotation here!
