- Chicken: Boneless skinless chicken breast or thighs work great in this recipe. To save time, use leftover diced chicken breast, slow cooker pulled chicken, or store-bought rotisserie chicken
- Bacon: Crispy and smoky, bacon delivers a burst of salty goodness and a satisfying crunch that contrasts beautifully with the creamy ingredients.
- Cheese: Cheddar brings a tangy, sharp bite, while Monterey Jack offers a smooth, melty creaminess. Together, they create a cheesy duo that's both bold and mellow, making every bite irresistibly gooey.
- Cream Cheese: This adds a luxuriously smooth texture and a tangy richness that elevates the casserole to the next level of creamy comfort.
- Sour Cream: Adds a little tanginess to the casserole and enhances the creaminess but also balances out the savory flavors with its slight tartness.
- Butter: Adds a decadent and velvety finish to the creamy sauce.
- Water: Helps keep the sauce from getting too thick. You can also use chicken stock.
- Frozen Hash Brown Potatoes: Look for shredded potatoes in your grocery store freezer section. You do not need to thaw these before cooking.
- Seasonings: Store-bought or homemade ranch seasoning mix, kosher salt, and black pepper.
- Garnish: Sliced green onions are optional, but they add a mild onion flavor, some freshness, and a pop of color to the casserole.

- Add a teaspoon of garlic powder to the sour cream mixture for extra flavor.

Storage
To Store: Keep leftovers in an airtight container in the fridge for 3-5 days. (These are my favorite airtight containers.)
To Reheat: Microwave individual portions on high in 30-second intervals. Alternatively, you can cover the dish with foil and reheat it in the oven at 350°F for about 10-15 minutes.
To Freeze: Prepare the casserole and cover with aluminum foil. Be sure to label. The casserole will keep for 3-4 months in the freezer.
To Thaw: Allow to thaw in the fridge overnight.
Make Ahead
This easy casserole recipe can be made a day ahead and kept in the fridge until you're ready to bake it.
How to Use Leftovers
Breakfast Upgrade: Reheat a portion and top with a fried egg for a protein-packed breakfast.

- 2 cups diced chicken
- 10 slices cooked bacon
- 1 cup shredded cheddar cheese divided
- 1 cup Monterey jack cheese divided
- 1 8 oz. cream cheese
- 1 cup sour cream
- ½ cup butter melted
- ½ cup water
- 1 30 oz. frozen hash brown potatoes
- sliced green onions optional
- kosher salt and black pepper to taste
Instructions
- Preheat oven to 350-degrees F.
- Lightly spray or grease a baking pan.
- In a large bowl, combine the cream cheese and half of the shredded cheese.1 8 oz. cream cheese, 1 cup shredded cheddar cheese
- Mix together the sour cream, ranch dressing mix, half of the crispy bacon, melted butter, and water.2 tablespoons store-bought or Homemade Ranch Seasoning Mix, 10 slices cooked bacon, 1 cup sour cream, ½ cup butter, ½ cup water

As I am a Pescatarian I use Morningstar Veggie Bacon & Quorn Chicken alternative pieces in this recipe. Also, I like using a 5-Italian Cheese Blend of shredded cheeses in a lot of my recipes but kept to the Monterey & Sharp Cheddar for this one.
