    Chocolate Chip Cookie Bars are actually called just 'squares' in my family because we've been making them for so long. My grandmother started making these decades ago, and mom has kept up the tradition, and passed it down to me and my sisters.

    I love making chocolate chip cookies, but there's lots of times when I just do not have time to babysit the oven tray after tray. Chocolate Chip Cookie Bars are basically Chocolate Chip Blondies.  They're so good that even my husband, who dislikes coconut normally, loves them.

    Some call them Chocolate Chip Cookie Bars or Chocolate Chip Blondies, but in my family, we just call them 'squares'!

    Chocolate Chip Cookie Bars are chewy and sweet and make a great addition to any potluck or party. Without a doubt, this is my mom's number one go-to dessert recipe and she can whip up a batch of these babies in no time.

    Ingredients

    • butter OR margarine
    • brown sugar
    • granulated sugar
    • eggs
    • vanilla extract
    • flake sweetened coconut
    • semi-sweet chocolate chips
    • baking powder
    • all-purpose flour

    Instructions

    The batter for chocoalte chip cookie bars comes together in a flash!  Here's how to make them:

    1. Preheat the oven to 350-degrees F.
    2. Grease and flour a 9x13 baking pan.
    3. In a medium mixing bowl, sift together the flour and baking powder.
    4. In your mixer or a large mixing bowl, cream together the softened margarine or butter with the granulated and brown sugars.
    5. Add the eggs, water and vanilla extract to the butter/sugar mixture and mix to combine.
    6. Fold in the flake sweetened coconut and semi-sweet chocolate chips with a spoonula
    7. Pour the batter into the prepared pan and bake for 30 minutes until golden brown.
    8. Let the Chocolate Chip Cookie Bars cool completely before cutting into squares.

    Chocolate Chip Cookie Bars Recipe Variations

    While I don't think I would ever change up this recipe, you can easily change up the flavors by swapping out the chocolate chips. White chocolate, butterscotch or even peanut butter chips would all work. I bet toffee bits would be delicious, too. For those that love nuts in their cookies, try replacing the coconut with chopped walnuts or pecans.

    Ingredients

    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • ½ cup + 6 tablespoons butter or margarine
    • 1-½ cups light brown sugar, packed
    • ⅔ cup granulated sugar
    • 2 eggs
    • 4 tablespoons water
    • 1 tablespoon vanilla extract
    • 1 cup flake sweetened coconut
    • 2-½ cups semi-sweet chocolate chips

    Instructions

    • Preheat the oven to 350-degrees F.
    • Grease and flour a 9x13 baking pan. Set aside.
    • Sift together the all-purpose flour and baking powder. Set aside.
    • In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter with the granulated and light brown sugars.
    • Add in the eggs, water and vanilla extract.  Mix to combine.
    • With the mixer speed on low, slowly add the sifted flour mixture into the mixing bowl and mix until combined. The dough will seem sticky.
    • Remove the bowl from the mixer and use a spoonula to fold in the flaked coconut and chocolate chips.
    • Turn the dough out into the prepared pan and use the back of the spoonula to spread the batter evenly.
    • Bake for 30 minutes until the bars are golden brown.
    • Let cool before cutting into squares or bars.
