I love that you don't need a lot of fancy equipment to make these bacon cheddar chive scones.

In addition to measuring spoons, a liquid measuring cup, and dry measuring cups, you will also need mixing bowls and a whisk.

A pastry cutter is really helpful for combining the cold butter with the dry ingredients, however, if you don't have one, you can use the back of a fork.

    🔪Instructions

This is meant to be a brief overview of how to make bacon cheddar scones. For step-by-step instructions and a full printable recipe card with ingredients, please scroll down to the teal box below or Jump to Recipe.

    1. Line a baking sheet with parchment paper; set aside.
    2. In a large mixing bowl, combine flour, sugar, salt, and baking powder.
    3. Cut in cold butter until the mixture is crumbly.
    4. In a small bowl, combine wet ingredients - eggs, buttermilk, or cream.
    5. Add liquid ingredients, bacon, cheese, and chives to the flour mixture and stir until moistened, well combined, and holds together.
    6. Sprinkle a small amount of flour onto parchment paper or counter.
    7. On a lightly floured surface, press dough into an 8-inch circle, about ¾ inch thick.
    8. Brush top with additional buttermilk or cream.
    9. Using a bench knife or sharp knife, cut into 8 wedges.
    10. Divide triangles and place them on the prepared baking sheet or a silicone mat, leaving enough space for the scones to expand when cooked.
    11. Place in the refrigerator for 15-30 minutes.
    12. Preheat your oven to 400 degrees F.
    13. Bake until golden brown. Remove from oven and cool.

Shape the dough into a large circle, then cut into 8 triangles for large scones.

    ⏲️ Storage

If you want to make them ahead of time to enjoy later, you can freeze your bacon cheddar scones by placing them on a sheet pan and then freezing them until solid. Once they are frozen, you can transfer them to a bag. To reheat, add a few additional minutes to your baking time, and they are ready to go!

    💭 Frequently Asked Questions

What should the perfect scone be like?

The perfect scone is moist and crumbly. It should have an aroma of butter and look lightly golden on the outside.

How do I get my scones to rise and be fluffy?

Make sure you're using fresh baking powder and don't over knead your dough! You want your dough to just come together.

    Why are my scones dry?

For this bacon cheddar scone recipe you might need to add more milk or heavy cream. You want the dough to just come together because some crumbling is ideal, but you don't want a sandy texture. This article from Food Crumbles offers more tips to keep your scones moist and delicious.

    Tips

Be sure to start with crispy bacon. Use paper towels to get rid of any extra grease.

Don't overwork the scone dough or the scones will become tough.

    Variations

You can omit the fresh chives or use other fresh herbs if you like.

These scones can be baked on a lined baking pan or even in a large or medium skillet.

If you don't have buttermilk, you can make your own using regular milk and ¾ teaspoon of lemon juice. Allow it to sit for 5 minutes before using. Alternatively, you can substitute ½ cup of sour cream and ¼ cup milk if you like.

Instead of bacon, make your cheddar scones with diced ham.

    🍴 Serving Suggestions

You can enjoy savory scones with butter or jam, and are delicious with a fried egg for breakfast. They are also incredibly yummy with soup and I love to serve them with my Slow Cooker Chicken Chili Recipe or Pumpkin Chicken Chili.

For savory meals, these scones are super tasty with our garlic and chive butter.
