This apple salad is one of my favorite salads. With only five minutes of prep work needed, you can easily throw his salad together on short notice for a delicious side or meal. This salad is perfect for fall, but you can also enjoy it throughout the year.
🧂 Ingredients
- Crisp Apples: My favorite apples to use in this salad are Granny Smith, Fuji, Pink Lady, Envy, Jazz, or Empire because of the crisp texture. It's also delicious to use a mixture of apples such as sour Granny Smiths and sweet Pink Lady apples.
- Walnuts: For the best flavor, place the nuts in a dry skillet over medium heat to toast until you start to smell the nutty aroma, then remove and use.
- Feta Cheese: Feta is a salty cheese made from sheep's milk that is delicious with apples. You can use regular or low-fat.
- Mixed Greens: A Spring salad mix or something similar with a variety of greens is perfect. I like a combination of butterhead, leaf lettuce, arugula, and galactic lettuce.
- Lemon Mustard Vinaigrette: This homemade tangy lemony dressing is so yummy, but you can use a store-bought dressing in a pinch.

⭐ Ang's Tips
✔️ To keep the apples from oxidizing and turning brown, toss them with a little bit of fresh lemon juice.
🍲 Storage
To Store: Leftover Apple Feta Salad without dressing can be stored in an airtight container in the fridge for 1-2 days. Dressed salad is best eaten immediately. (These are my favorite airtight containers.)
📖 Variations
The first time you try any new recipe, we recommend that you make it just as it is written on the recipe card since that is how the recipe has been tested. However, the next time you make our recipe, you might want to try one of these ideas:
I like to use a spring mix of greens that includes red-leaf lettuce, baby kale, peppery arugula, baby spinach, and romaine lettuce. You can use whatever greens you prefer.
This salad is perfect for a light lunch or as a side salad for a larger meal. To make this a heartier salad, add sliced chicken breast or leftover pulled chicken. It's also great with leftover breaded pork chops or steak bites.
Instead of walnuts, you can use crunchy pecans, slivered almonds, or even toasted pumpkin seeds. Sunflower seeds and golden raisins or dried cranberries are also a nice addition to this apple feta salad.
Of course, you can add other fruits and veggies to this salad like thinly sliced red onion, cucumbers, celery, jicama, or even avocado.
